Agnes Bertha Marshall was one of late Victorian Britain’s most dynamic culinary entrepreneurs, a woman who blended technical skill with theatrical flair. Dubbed the “Queen of Ices,” she transformed frozen desserts from occasional novelties into fashionable centrepieces, designing ever more elaborate moulds and pioneering rapid freeze techniques that astonished her audiences.From her Mortimer Street headquarters she built a remarkably modern business: a cookery school, a publishing house, a mail order operation, and a line of branded equipment ranging from patent freezers to copper moulds. Her demonstrations drew crowds, her books sold widely, and her weekly paper "The Table" helped cement her influence. Though her life was cut short in 1905, Marshall's blend of innovation, showmanship, and commercial instinct left a vivid imprint on British domestic culture.
