Jerusalem artichokes naturally contain potassium, iron, vitamin C, and inulin, a special type of dietary fiber. Growing your own is not only rewarding, but also a beautiful way to connect with your food from soil to supper.

All tubers are grown using permaculture-inspired, sustainable methods — no pesticides, no synthetic fertilizers, no harsh chemicals. While not certified organic, they’re nurtured with the same care and respect for the earth. Healthy soil = healthy food.

Planting & Care Tips
(How to give your tubers a happy head start!)

Your tubers are ready to go as soon as they arrive. Keep them sealed in their bag until planting so they don’t dry out.

When & How to Plant
If your soil isn’t frozen solid, you can plant right away — these hardy tubers don’t mind cool weather.

Plant 3–4 inches deep, and if you have mulch, give them a soft, cozy layer on top.

Space tubers about 1 foot apart so each one has room to grow.

If you can’t plant when they arrive:

Keep them in the fridge as packaged OR

Wrap them in foil, slip into a loose produce bag, and store in your veggie drawer until the ground warms up.

What to Expect in Spring
Sunchokes are slow starters — they often don’t sprout until mid to late May. But once they decide it’s time, they take off quickly, growing into tall, impressive plants.

Growth & Beauty
By late summer, expect 8–10 foot plants topped with sunny, daisy-like blooms. They’re absolute pollinator magnets — bees, butterflies, and beneficial insects love them.

Their Nature (and a Gentle Warning!)
Jerusalem artichokes die back in frost, but the tubers survive underground and will return every year unless completely dug out. They like to spread — which is why they make excellent low-maintenance edimentals (edible + ornamental plants). Plant them where they have space to naturalize.

Digestive Considerations

Jerusalem artichokes contain inulin, which can cause gassiness for some people. If you’re new to sunchokes, add them slowly to your meals.
