A Japanese chef's knife is  meaning 'beef knife'.
While these knives are usually honed and sharpened on both sides, their blades are still given Japanese-style acute-angle cutting edges with a very sharp angle to increase cutting ability. chef's knife is a multi-purpose knife designed to perform well at many differing kitchen tasks, rather than excelling at any one in particular. It can be used for mincing, slicing, and chopping vegetables, slicing meat, and dis jointing large cuts.

Quite simply, “Nakiri” is Japanese for "vegetable knife." If you haven’t used Japanese-style knives before, the nakiri is sure to attract your attention due to its interesting shape. Yet this blade shape is quite practical, too. With its blunt tip, the Nakiri is safer to use in the kitchen, but without sacrificing any of the slicing and dicing power you need when processing vegetables. Because of its straight blade, edge, and spine, the nakiri isn’t rocked like a chef's knife. Instead, use a push cut by moving the knife down and forward while keeping the edge parallel to the cutting surface. If you cut vegetables for salad or stir-fry, you will simply love using the Nakiri.

A Small Santoku knife has a short blade (4~5 inches) and a tip that can be either straight or that curves up to the point. The Santoku may be used in a rocking motion; however,

very little cutting edge makes contact with the surface due to the extreme radius of the tip and, very little "tip travel" occurs due to the short cantilever span from contact landing to tip.

This knife is good for peeling apples and other fruits or vegetables, mincing small items like shallots and garlic, or trimming herbs

and scallions .A paring knife has a short blade about (3 inches) and a tip that can be either straight or that curves up to the point.

"Japanese Steel is better than other Steel. Knives made of normal steel will not hold an edge as long as Japanese knives."
