Eldon's Sweet & Spicy Snack Stick Seasoning


Sweet and Spicy snack sticks offer A hint of sweetness and richer in flavor than traditional pepper stick seasoning.

Seasons 15 lbs of meat.

Add cayenne or pepper flakes for a hotter flavor.

Ingredients: salt, spices, corn syrup solids, sugar, MSG, dextrose, natural hickory smoke powder, tricalcium phosphate, garlic, natural flavors & sodium erythorbate.

Directions:  For 15 LBS: combine 13 lbs of ground meat, 2 lbs beef fat, grind twice through a 3/16" grinder plate or use 15 lbs ground meat add seasoning, cure packet & 1-2 cups ice water---for a richer product add 1/2 cup flavor 86 or 1 cup non fat dry milk, knead well. Stuff into 19-26 mm collagen or natural sheep casings, twist/tie into 8-10" links.  Refrigerate overnight to cure. Next day hang in smokehouse or oven & smoke/cook in usual manner until internal temp reaches 160 degrees F;  remove, hang at room temp till cool.
