It is important to understand Whole Iberico Hams when purchasing one. Iberico Hams generally yield 50%. That means you might expect to get around 4 Kg. of ham slices out of this leg if sliced properly. Everything else is fat and bones. Also Iberico Hams are 50% or 75% Iberico breed. Only Black Labels are 100% Iberico breed, also known as Pata Negra. But this is not really an important quality for the final product as what really matters is the lifestyle of the animal, their nutrition and the time of curation. Once your ham arrives, remove all the packaging and keep it at room temperature, it will last for another year! Once open, it will be good for another 45 days or so before it becomes drier. Just cover the surface with cling film when not in use. I hope this helps!
