Elephant garlic is easy to grow in most loose soils. Plant them in the ground before the first frost, and they will overwinter without being damaged. They are harvested in the spring after 5-6 months of growth.
To plant the cloves, till up the soil and add some high nitrogen fertilizer. Plant the cloves about 3-4 inches deep with the pointed end up. Space them about 6-8 inches apart to allow maximal bulb diameter. Mulch with leaves, pine straw or bark. Water them well every week for the first 3 weeks. After 3 weeks, you should see green shoots emerge from the soil.
Mature Elephant Garlic Bulbs will grow to over 3 inches in diameter with each bulb having 4-6 cloves. During the spring growth, they form scapes (flower bulbs) that need to be removed so the bulb will keep on growing. Harvest the bulbs in the late spring by digging them up by the roots under the bulb when the lower 4 leaves turn yellow. Remove excess soil from the bulbs and then place the mature clean bulbs in a dry, cool place to dry out. After 2-3 weeks, the dry leaves can be removed and the roots trimmed off. For long storage life, keep the intact garlic or the cloves in a cool place.
Elephant garlic is not really a garlic, but a leek. It has a mild garlic flavor and whole elephant garlic bulbs can be roasted and used in many recipes. Individual garlic cloves can be pressed and used in many reicpes.
