Motam Woodworks - Robert Sorby ProEdge Knife Sharpening Jig
This is an alternative to the Robert Sorby knife jig which uses the clamp and bar.
Two Version available:
Standard (60mm)- This is ideal for larger knives as it has a wider base to support the knife.
Narrow base (42mm) - ideal for smaller knives or if you want to get closer to the heel/bolster of the knife.
Features:
- It's quicker and easier to setup, saving you time.
- Provides an accurate and consistent angle
- Repeatability, once setup you can sharpen several knives.
- Simpler to use compared to the clamp style
Choice of 5 Angles:
- 15 degree is more commonly found on Japanese style knives (very sharp edge, less edge durability)
- 17 degree is a middle ground between the both Japanese and western style knives (good durability, good sharpness)
- 20 degree is more commonly found on western style knives (better edge durability, less sharp edge)
- 25 & 30 degree is more commonly found on hunting/outdoor knives
