The All-In-One Historical Brew. Skip the hops and rediscover the "lost" flavors of the medieval world. Our Mugwort Ale Brewing Kit is a professional-grade, complete ingredient pack for creating a traditional Gruit-style herbal beer. This is the ultimate project for craft brewers, historical reenactors, and those seeking a bitter, aromatic alternative to hopped beer.
Before the dominance of hops, brewers relied on a secret blend of herbs known as "Gruit." Our kit provides a historically accurate profile of bittering and aromatic botanicals:
Mugwort: The legendary "dream herb" that provides a deep, earthy bite and herbal complexity.
Wild Yarrow: Adds a sharp, astringent quality and a signature floral-wild aroma.
Juniper Berries: Provides the resinous, piney backbone required to balance the malt sweetness.
The Grains: A professional blend of Malted Barley and Raw Oats. The oats ensure a smooth, creamy mouthfeel and excellent head retention for your homebrew.
The Yeast: Included in every kit is a specialized brewer's yeast selected for its ability to complement herbal profiles without overpowering the delicate gruit aromatics.
Potency & Purity: Every botanical is ethically gathered and peak-dried to ensure maximum flavor extraction during the boil.

In ancient times, the "Lords of the Spice" controlled the herbal blends used in brewing. Our kit honors this lineage, allowing you to recreate a Gruit Ale that is earthy, complex, and entirely unique. Whether you are a home brewing enthusiast or a student of historical herbalism, this kit offers a sensory bridge to the past.
Preparation: The Grains Before starting, you must crack the husks of your Malted Barley and Raw Oats.
Method: Use a grain mill, a baking roller, or a quick pulse in a blender.
Goal: You want the grains cracked open, not ground into a fine flour.
Add your crushed Raw Oats to your brewing water (1 or 2 gallons depending on your kit size).
Bring to a steady boil for 40–60 minutes, stirring frequently to prevent sticking.
This process gelatinizes the starches in the oats, preparing them for the mash.
Drop the temperature of your liquid down to 145°F. Once reached, stir in your Malted Barley.
CRITICAL: Do not exceed 150°F. Higher temperatures will damage the natural enzymes needed for sugar conversion.
Hold: Keep the mixture (the "mash") between 120°F and 140°F for 40–60 minutes.
This is where the magic happens: the enzymes turn grain starch into fermentable sugar.
During the final 15 minutes of your mash, add the Mugwort, Yarrow, and Juniper botanical blend. This allows the heat to extract the bittering agents and essential oils without boiling away the delicate aromas.
Once the mash is complete, let the liquid cool slightly.
Strain the mixture through a fine mesh or cheesecloth.
Discard the grains (they make excellent compost!) and keep the golden liquid, now called "wort."
Allow the wort to cool further until it reaches 70°F – 80°F.
Pitching: Sprinkle the included Brewing Yeast over the surface.
Transfer to your sanitized fermentation vessel and fit with an airlock.
Sanitation: Ensure every tool that touches your brew after the boil is thoroughly cleaned.
Fermentation: Store in a cool, dark place. Most Gruit Ales are ready to bottle once the airlock stops bubbling (usually 7–14 days).
The Reward: Your Mugwort Ale will be earthy, complex, and entirely unique.
This addition completes the instruction sheet, ensuring your customers feel supported throughout the "Alchemist's Ritual." I’ve kept the language concise to ensure it still fits on a single 8.5 x 11 page.
Q: Why does my brew smell like bread or earth? A: This is normal! Unlike modern hoppy beers, a Gruit Ale relies on the deep, musky aroma of Mugwort and the grain-forward scent of Malted Barley. During fermentation, the yeast will create a natural "bready" aroma that settles into a complex herbal profile as it ages.
Q: Do I need to boil the herbs? A: We recommend adding the Mugwort, Yarrow, and Juniper during the final 15 minutes of the mash (Step 3). Boiling herbs for too long can make the brew overly astringent. This "steeping" method extracts the perfect balance of bitterness and essential oils.
Q: Can I use honey or sugar to make it stronger? A: Yes. If you want a higher alcohol content (ABV), you can stir in 1/2 cup of honey or organic cane sugar during Step 4 while the liquid is still warm. This follows the traditional "Lords of the Spice" method for creating a "Strong Ale."
Issue: My mash temperature went above 150°F.
The Fix: Don't panic, but act fast. Add a small amount of cold filtered water to drop the temp back to 140°F. If the temp stayed high for only a few minutes, your enzymes should still be active. If it stayed high for an hour, the starch conversion may be incomplete (resulting in a sweeter, thicker brew).
Issue: There is no bubbling in my airlock after 24 hours.
The Check: Ensure your fermentation vessel is airtight. If it is, check the temperature. If the room is too cold (below 65°F), the yeast may be "sleeping." Move it to a warmer spot (70°F–75°F). Never add yeast to liquid hotter than 90°F, or you may kill it.
Issue: The brew looks very cloudy.
The Cause: This is common with Raw Oats and traditional herbal brewing. Our kits are "old-fashioned" and unfiltered. Most of the sediment will settle to the bottom (the "trub") after 7–10 days. Simply siphon or pour carefully when bottling to leave the clouds behind.
Free Shipping: We cover the cost of tracked shipping to ensure your grains and yeast arrive fresh and ready for the kettle.
