About This Items

  1. Willow-blade knives measuring around 200 mm (7.87 inches) are relatively maneuverable, making them ideal for home use and for filleting fish up to medium size. In particular, their compact size makes them easy to handle and doesn’t take up much space on the cutting board when slicing sashimi.

  2. 1. Suitable Fish Sizes
  3. Medium-sized fish (approx. 12–16 inches in total length): Horse mackerel, mackerel, sardines, black sea bream, sea bream (smaller varieties), sea bass, flounder, halibut, etc. 

  4. 2. Specific Recommended Species
  5. Horse mackerel, sardines, mackerel: Small to medium-sized, with flesh that isn’t too soft and is easy to fillet.
  6. Sea bream, flounder, flatfish: A length of 200 mm is ideal for slicing sashimi after filleting.
  7. Squid: Suitable for making thin, delicate slices, such as “ika somen” sashimi.

  8. The handle has been replaced with a new one.
  9. The handle of this knife is crafted by skilled artisans in modern Japan and is of the highest quality.

  2. This hand-hammered forged product uses Yasuki steel “SK steel” for the core material.
  3. Yasuki steel with forging (a brand of knife steel by Hitachi Metals) has a sharp edge, showing a razor-like “sharp” cutting edge, and it is easy to hit the whetstone, and the edge is straightforward, but every time it hits a cutting board or bone, it also becomes dull and straightforward.
