SALAMI seasoning is a traditional seasoning that we have used for years because we can use it for cooked and dry sausage. I make my salami in a 50mm (2" diameter) collagen casings, I like to add our dried jalapeno and/or our excellent Wisconsin Cheddar cheese to kick things up a notch. Also to add even more variety, I use the seasoning in a 21mm snack stick casings to make individual smaller on-the-go snack size salami sticks that suits just about every member of the family.This seasoning package contains the seasoning, as well as the cure, for 10 pounds of meat.
