Sakai Takayuki/Kasumitogi Professional Handle,Shirogami(Yasuki White Steel),Japanese Chef's Knife, Kamagata Usuba(Vegetable Knife) Single bevel for Right Handed,manufactured by one of the most famous workshop, Aoki Hamono Co.,Ltd. in Sakai/Osaka prefecture, Japan.We have direct transactions with them and ship out from Sakai City,Osaka/Japan.
This series,called "Kasumitogi Professional Handle( with Buffalo Horn Bolster)" is of cost-effective, basic Professional use, made of Yasuki Shirogami(White)Steel.
In Japanese cooking,preparing Vegetables requires not onl simply cutting,but can also involve slicing them into sheets(Katsuramuki) or cutting them small and intricately for decorative purpose. Usuba is used to execute such tasks. While there are some differences in shape between the Kanto(Edo style/Usuba) and the Kansai(Western style/Kamagata Usuba) regions, the purpose for each Usuba are in most part the same.
