A dark amber to black coloured honey with aromas of bush blossom and molasses. It is full-bodied, strong and sweet in flavour with a thick syrup-like consistency.
We select the most premium honey from the season – this honey is filled with beneficial properties. It is very high in antioxidants, prebiotics and antimicrobial activity – with a Total Activity rating of 35+ (the highest possible level).
The dwutta or Eucalyptus Todtiana (also known as blackbutt tree) flowers in the Australian summer months of December to February. It is endemic to the Southwest Australia Biodiversity Hotspot.
RAW HONEY AS A THERAPEUTIC AGENT FOR THE TREATMENT
The antibacterial activity of this honey is attributed and influenced by various properties of honey, such as low water content, high viscosity, acidity, hydrogen peroxide content, peptides, non-peroxidase glycopeptides and proteins. Hydrogen peroxide content is believed to be the two biggest contributing factors to antibacterial properties in this honey.
Industry recognised measurement of honey antibacterial activity is Total Activity (TA): A measure of the antimicrobial potency (bacterial + fungal) of honey. It is determined by the level of hydrogen peroxide and non-peroxide antimicrobial activity present in the honey. Expressed as %phenol which is a scientific measure of total antibacterial activity. The higher the number, the higher the honeys antimicrobial activity. This honey has been laboratory tested and confirmed to have a TA rating of TA35+. This is considered “Super Strength” or “Medical Grade” – it is able to treat serious skin infections, burn and wounds under the guidance of a medical professional.
There are a range of different measures on honey jars which are measuring completely different things. However, they are all reasonable measurements to signify the quality of honey. Understanding that these measurements are different, the industry has broad acceptance that TA35+ is broadly equivalent to: NPA 33+, MGO 2001+, UMF 35+.
