Crystallization is a natural process of raw honey which is a sign of purity and does NOT indicate bad quality, spoilage or adulteration.

The crystallization rate may vary depending on the natural glucose content of each honey variety.

For example, orange honey starts to crystallize in 2-3 months & pine honey in 12-24 months.

In this case, thyme honey starts to crystallize between 6-12 months from the date of production.
