AWC101 is one of the few true low-profile pancake (disk) load cells. 

If height is an issue with your application, consider a 100kg capacity load cell at only 25mm (1") height and 50mm (2" ) diameter.
AWC101 is a low profile, stainless steel, laser welded and sealed load cell meeting IP68 protection.

You can make a tank or hopper weighing scale using 3 or 4 load cells.
