Polydextrose 3, is produced from glucose, sorbitol and citric acid in a ratio of 90/9.9/0.1  and comes in the form of a white fine powder.

Polydextrose 3 is very soluble, allowing clear solutions of greater than 80% w/w to be created at 25 °C in water without haze.

The  bland taste of polydextrose 3 renders it applicable to both sweet and savoury applications, however certain sweet products , such as confectionary usually require the addition of high intensity sweeteners.


It is very stable to extremes of pH and temperature.

Due to its viscosity, polydextrose 3 gives good mouthfeel in soft drinks, without adding sweetness.

The caloric level is 1 cal/g.

It is partially metabolised in the human digestive system and suitable for diabetic and low glycaemic index products.

It does not promote tooth decay, as it is not metabolised by oral bacteria.
