The Story

The Jewel of the Shak Bowl

Red spinach — লালশাক (lal shak) — is a much-loved leafy green of Bengali and South Asian kitchens. A type of amaranth rather than a true spinach, it is treasured both for its striking ruby-red leaves and for being one of the quickest, most generous greens you can grow.

Lightly stir-fried with garlic and a little oil, or simmered into a soft, savoury shak, the leaves and tender stems make a simple, deeply satisfying everyday dish. The colour alone earns it a place in the garden — a sweep of glowing crimson among the green.

Best of all, it could not be easier. Sow, water, and within a few short weeks you are harvesting handfuls of vivid leaves, with more regrowing behind them. From microgreens to mature shak, this is a true cut-and-come-again favourite.

Growing Guide

From Seed to Crimson Harvest

01

Sow Shallow

The seeds are tiny, so sow them shallowly (about 5 mm) into warm, moist soil and barely cover. Scatter thinly for leaves, or densely in trays for microgreens. Seedlings appear in 5–10 days.

02

Thin to Grow On

For full plants, thin seedlings to about 15–25 cm apart. For cut-leaf and baby-leaf harvests, you can leave them growing more closely together.

03

Water & Warmth

Red spinach loves full sun and warmth. Keep the soil evenly moist for lush, tender leaves — it grows quickly and needs little fuss beyond regular watering.

04

Cut & Come Again

Pick outer leaves, or cut young plants a few centimetres above the base, and they will regrow for repeat harvests. Always harvest while leaves are young and tender.

05

Sow in Succession

For a steady supply, sow a small patch every 2–3 weeks through the warm season. Fresh, vivid leaves will then be ready almost continuously.

Healthy Plants

Pest & Problem Guide

Pest

Leaf Miners

Pale, squiggly tunnels inside the leaves. Pick off and bin affected leaves promptly, and protect plants with fine netting where the problem is common.

Pest

Caterpillars

Chewed leaves and ragged holes. Inspect regularly, hand-pick where practical, and use an organic caterpillar control if numbers build up.

Pest

Aphids

Soft clusters on tender new growth. Hose them off, encourage ladybirds, or treat with a mild organic soap spray, checking leaf undersides.

Pest

Slugs & Snails

They love soft young seedlings, especially in damp weather. Protect emerging plants with barriers or organic pellets and clear nearby hiding spots.

Disease

Damping Off

Seedlings collapse at the base in cold, wet, airless conditions. Sow into warm fresh mix, avoid overwatering, and give seedlings good light and airflow.

Disease

Leaf Spot

Brown or dark spots on leaves in humid, crowded conditions. Improve airflow with good spacing, water at the base, and remove affected leaves.

In the Kitchen

Cooking Your Lal Shak

🍲 Simple, Tasty & Nutritious

Cook it like spinach. Wash well, then stir-fry the leaves and tender young stems quickly with garlic and a little oil, or simmer into a soft shak. The leaves wilt down a lot, so use a generous handful.

Keep it tender. Harvest young for the best flavour and texture, and add the leaves towards the end of cooking so they keep their colour and freshness.

Naturally nourishing. Like other amaranth greens, red spinach is traditionally valued as a wholesome, nutritious leafy vegetable — a colourful, everyday addition to the table.
