One of the most important legumes in the world, white clover has so many practical

uses. It is a great companion plant around the vegetable garden, can create a living

mulch, fixes nitrogen into your soil, provides green manure, used as a cover crop,

improves lawn/soil health, attracts bees and other beneficial insects which just love its

nectar filled flowers.

FOOD

Leaves and flowers may be added to salads raw or cooked/steamed/blanched/fried like

any other vegetable. The flowers can also be used to make a delightful honey. See the

 recipe below.

FLOWERS

A great low growing ornamental garden plant that blooms

heavily with colourful white/cream flowerheads, sometimes with a pink tinge. Not

only a great medicinal plant but excellent for summer colour. Prefers a sunny location in

 well drained soil.

HOW TO MAKE HONEY

Pick a bunch of fresh flowers 2 cups or (around 200 - 250 flower-heads).

Place them into a saucepan with 1 litre of water, bring to a boil for just 20 minutes.

Let the mixture cool down and let it stand overnight.

The next day, strain the liquid, discard the flowers and add 1kg of sugar to the liquid.

Now bring the liquid to a boil, mix well until it thickens.

Add the liquid into your favourite jars for later use!

Some recipes add lemon or orange to the flower mixture, while you may experiment by

adding calendula, vanilla bean, mint or other unique herbs and spices.

HOW TO MAKE TEA

Clover tea has a delicate, floral flavour - making it very suitable for all kinds of warm

and iced teas. The flowers of the plant have a delicate sweet flavour. Collect fresh

flowers or you may dry them until crisp.

Here are the basic steps for making any herbal tea:
