Ham Preservation : We recommendation For serrano ham only : We recommend: Please keep in mind that the ham is a natural product and therefore may form a layer of white mould it is okay.After we suggest to clean with towel, live it in room full of air and hang rest for at least 1-2 days before eating. Then put the ham in the holder,  Never put the ham in the refrigerator nor in a cabinet set, it cannot spoil, because air-dried, it must be in an air-flooded room. Always protect the interface with the beginning cut fat rind and cover with a  ham cover , that the ham does not dry out.  If ham dry out, simply rub with some olive oil and let it dry,  This is food item,  return not possible .  joke...(;  there is nothing we can do with the bone when you finished with the meat - - please note the weight is an approximate - 4kg might be btw 3.9-4.2, 5kg might be btw 4.9 - 5.3 depending on the your scale. the measurement is as stated by the butcher himself so they have a professional scale
