A natural phospholipid from soybean, Soy Lecithin Powder is an emulsifying agent that helps fat and water stay together.

Food properties and usage:


Used as emulsifier (foaming agent) and antioxidant

Disperses in water and soluble in oil

Soy lecithin is a substitute for eggs

Used in baked goods to improve doughs and batters or keep them from staling.

Soy lecithin is compatible with monoglycerides for added emulsion stability.


The standard concentration for culinary use is 0.3% to 2% lecithin to liquid to be foamed
