Ultratex 3  is a high performance modified food starch derived from tapioca

It is gluten free, non GMO and vegan.

Ultratex 3 is a white, free flowing powder with a bland taste .

It is Freeze / Thaw stable and has a high  resistance to heating and acidity.

Dispersions of Ultra-Tex 3 have a smooth, short texture and excellent sheen

The product imparts a rich creamy mouth feel to prepared foods

It possesses a very bland flavor profile with good mouth melt-away characteristics.

It also offers excellent cold temperature storage stability to refrigerated or frozen products.

 

Gluten free products :

Ultratex 3 improves  the rise, taste, texture, appearance and extends shelf life of gluten free products. 

In addition, it creates a more moist and better crumb texture to baked goods 

it improves the crispy texture of deep-fried goods

Usage for GF flour mixes:

use 4.5% to 5% of gluten free flour total - ( 45 to 50g  added to 1 kg of glutenfree flour mix)

Ultratex 3 is at least 3 times as strong as Expandex.

 

Molecular cuisine :

Ultratex 3 can  thicken  sweet or savoury liquids. 

Thickened liquids can be spread into thin sheets and then dried to create a crispy sheet 

Ultra-Tex can easily be added to a liquid by whisking it in, or using an immersion blender to blend it in.

Use 1% to 4% for basic thickening and a 4.0% to 8.0% for major thickening.
