Monocalcium phosphate is also  termed Calcium diorthophosphate , Monobasic calcium phosphate or   Acid calcium phosphate ,

 

Monocalcium phosphate anhydrous (MCP-A),  is the inorganic compound with the formula Ca(H2PO4)2  with a molar mass of 234.05 g/mol

 

It is sligthly soluble in water :   2g in 100ml at 20°C.

 

It is mildly acidic  with a 1% solution having a PH of 3.5 – 4.5


Used as a rapidly reacting leavening acid in bakery products such as double acting baking powder and mixes  requiring a two stage leavening action


Also a calcium supplement in a wide variety of foods

Widely used as a dough conditioner for bread

 

Used for making “calcium water” , the key ingredient to gel LM and LMA pectins

( low or no sugar pectins - Pomona , Ball , Sure-Jell and alikes )
