This is an authentic vintage menu from Jean-Louis Palladin’s groundbreaking restaurant at the historic Watergate complex — one of the most influential fine-dining destinations in American culinary history.

Chef Jean-Louis Palladin (1946–2001) was a French culinary pioneer who brought farm-to-table philosophy and modernist French technique to the U.S. long before it was trendy. He earned two Michelin stars (the first American chef to do so) and was named “Best Chef in America” by the James Beard Foundation.
