Vintage Fine American Chef Collection Series X-Small Chef Knife with High Carbon Stainless Steel Blade & Bennett's BioCurve Wood Handle Made by Chicago Cutlery

Alfred Paulson founded Chicago Cutlery in 1930. 

This knife has the blade fabricated from the high carbon stainless steel designed to take a finer edge and hold it longer providing sharp cutting satisfaction.  The handle is secured with rivets over the full tang to good fitting for durability, strength, and balance.

The Chicago high-carbon stainless steel knives have properties of stainless steel in that they resist rust, spots or stains, yet like carbon steel they hold a very sharp edge and are easy to re-sharpen.


This knife has the BioCurve handle designed by John F. Bennett with patent number 4,038,719 in 1977.  Curved handle conforms to the natural contour of the hand creating straight wrist & better hand-eye coordination and reducing wrist fatigue and tension during cutting process.
