Sodium phosphate dibasic is also termed disodium monohydrogen orthophosphate or
disodium monophosphate or disodium phosphate.
Disodium phosphate anhydrous (DSP-A), is the inorganic compound with the formula Na2HPO4 with a molar mass of 141.96 g/mol
It is moderately soluble in water with a solubility of 12g in 100ml at 25°C.
It is mildly alkaline with a 1% solution having a PH of 9.2.
Sodium phosphate dibasic can be used as sequestrant, texturiser, a dietary and nutrient supplement and buffer in coffee whiteners, cream sauce,evaporated milk, instant pudding
and whipped products.
It is used as an emulsifier in pasteurised process cheese, cheese food, and cheese spread products.
It can be used to decrease the amount of cooked-out juices in meat food products
With its high calcium binding capacity,it is widely used to prevent pre-gelation when dispersing calcium sensitive hydrocolloids ( alginates , carrageenans ,pectins, …..) in water.
