And polished and forged by a renowned Japanese knifemaker; forged blade with 3 layers of 90CR18MOV composite steel with a hardness of 58±2 HRC; significantly improved sharpness, thinness, edge retention, higher strength.
The ergonomically designed mahogany handle and well-balanced, slightly curved blade ensure that knife cutting is easy to keep ripe fruits and vegetables in tip-top shape; while relieving fatigue and finger pain caused by prolonged peeling.
