Another Junior League Cookbook from Waco Texas. This is the second printing of the first edition; issue of 10,000, for a total of 20,000 available at the time of issue. Every recipe was tested by League members, and I also can attest that every recipe I tried in this book was a success (or if not, blame the cook, not the book).
There are the usual chapters (appetizers, salads, etc.) but I personally loved the chapter on Texas dishes, which is a mini cookbook in itself. Here you will find the Jalapeno Jelly (wow), which go beautifully in the Hot Pepper Pastries; the famous Texas Caviar, which is made with pinto beans, and has a kick you never found in fish eggs. A drink called "Bourbon on the Brazos has its own kind of kick, and Cappy's Kickapoo Joy Juice, which is not alcoholic at all, can still knock you into next Wednesday. Of course Tortilla soup is listed, but I found the Poblano Soup Gratinee one of the best soups anywhere; rich with peppers, onions and cheese. Added to that is genuine Texas chili, hot enough to dissolve metal (if you want to miss the heartburn, cut down on the heat) and not a bean in sight.
I personally found this Junior League Cookbook a cut above the rest, and made a number of its recipes.
