This huge and hefty 450-page, oversized hardback with dust jacket is called, "A Guide to Modern American Cooking," by Pol Martin.  It looks like the bottom edge of the book must have gotten damp at one time, and the dust jacket on the bottom of both the front and back is adhered to the book as a result.  Even so, the book itself is in very nice condition.  It looks as though it was hardly used.  It was published in 1989 by Brimar.

It includes over 620 photos in full color, easy step-by-step techniques, a special microwave section, smart and simple recipes, and nutritional data (calorie, carbohydrate, protein, fat, and fiber content) for each recipe.
