Avoid allowing the soil to dry out completely, as stress can encourage the plant to flower prematurely. Harvest the outer leaves as required, taking care not to remove too much foliage at once. For the best flavour, pick leaves regularly while they are young and fresh. Once the plant begins flowering, allow some plants to develop seed heads if you would like to harvest coriander seed. Wait until the seed heads turn light brown, then cut and dry them in a cool, well ventilated place. For a continuous supply of fresh leaves, sow a new crop approximately every two weeks. This provides a succession of young plants and helps ensure a steady supply throughout the year.
