【碧螺春綠茶 Pi-Lo-Chun Green Tea】
綠茶屬不醱酵茶，能夠保存大部分的成份和營養，但是相較於其他種類的茶葉，綠茶是最容易被氧化的，所以保存期限也是最短的，買回來後應該要快點喝完，否則就要冷藏保存，冰箱內不宜有其他異味，以免破壞原有的味道和成份。
一、何謂綠茶
茶葉採摘後與空氣中的氧接觸，進行酵素氧化作用即醱酵。製茶時茶葉採摘後為避免醱酵，而馬上殺菁製成的茶葉就稱為「不醱酵茶」。這種茶葉經沖泡後湯色較為青綠所以稱為「綠茶」。
二、找綠茶挑季節
採製綠茶應選芽葉較佳者。春分之後茶樹開始發芽茁壯，到了清明節時茶芽肥厚鮮嫩，採製綠茶這個時機最好。清明後茶芽迅速成長為開面葉，較不適宜製造鮮嫩的綠茶，成茶品質稍差些。所以上好的綠茶要在清明節前採製，其次是梅雨前，也就是春天找茶最好。
三、選購綠茶四部曲
1、形
龍井外型應扁平挺直、茸毛密披、茶芽壯碩、長短勻稱潔淨帶油潤光澤。略為揉捻呈膨鬆狀，且幼嫩葉中帶白毫的則是碧螺春。
2、色
沖泡後茶湯清黃偏綠，湯中白毫浮現，湯色明亮清綠。泡開的茶葉成鮮綠色。
3、味
滋味鮮活甘爽，回甘力強，風味獨特是綠茶的特色。
4、香
新鮮的綠茶聞起來為有如新鮮的青草香味或略似海苔般的香氣。香氣清新鮮活而無雜味是綠茶應有的條件。
碧螺春綠茶係採摘新長出之嫩芽及葉製成，是屬於不發酵之綠茶類，主要是欣賞它的新鮮、色翠、型美、甘醇和充滿活性的感覺。更因其色鮮翠，其形亦美，代表著春的氣息，是早春飲茶之極品。
