Preparation method of natto:
Bean selection: select about 250 grams of dry soybeans per year, wash and pick out bad beans; Genetically modified beans for the
new year are not available.
Soaking beans: Soak the washed soybeans for about 12 hours, then pour off the soybean water and put it into the fermentation tank.
Steaming beans: steam the soybeans in water until they are easily crushed, usually for 90 minutes.
Pour the powder: when the soybean is cool enough to not be hot (below 40℃), pour the natto powder into the soybean and stir well.
Fermentation: Put the stirred soybeans into a natto machine or yogurt machine, and ferment at a constant temperature of about 42℃
for 18 hours without using an inner cover. The success is that the surface of soybean is covered with a layer of white bacteria film and
has the smell of natto; Natto that can't be eaten at one time can be stored in a sealed bag in the refrigerator or frozen (it is recommended
to keep it sealed and eat it as soon as possible).
