📚 A Collection for the Master Chef / Збірка для кухмістера

🍽 «Збірка для кухмістера з приготування як страв, так і випіків, переписана року 1757 дня 24 липня» — колекція рецептур, які походять з різних джерел, була переписана для Розалії Поцейової із Загоровських, власниці Устилуга на Волині, а також Стрижова, Влодави та Ружанки в Польщі. 
Понад тисячу рукописних рецептур збірки, які відтворюють образ старовинного кулінарного мистецтва, вказують на її практичний характер. Текст 1757 року містить, серед іншого, копію втраченого «Кухмістерства» XVI століття, рецептури XVII від коронної кухмістерової, а також переписи від осіб з оточення Загоровських. Описи лікувальних властивостей їжі та приготування домашніх ліків сусідують з порадами з ветеринарії, садівництва, городництва й бджільництва.
Рукопис із зібрання Національної бібліотеки України був опублікований завдяки співпраці польських і українських дослідників. Збірка, впорядкована для спадкоємиць русько-українських родів Загоровських і Поцеїв, є частиною спільної українсько-польської спадщини, історією не лише про їжу, а й про естетику, знання, релігію та ідентичність.
🍲“A Collection for a Master Cook on the Preparation of Both Dishes and Baked Goods, Transcribed on July 24, 1757”—a collection of recipes drawn from various sources—was transcribed for Rosalia Potsejova, née Zagorowska, the owner of Ustylug in Volhynia, as well as Stryzhiv, Vlodava, and Ruzhanka in Poland.
The collection’s more than one thousand handwritten recipes, which evoke the spirit of ancient culinary art, highlight its practical nature. The 1757 text includes, among other things, a copy of the lost 16th-century *Kuchmistrstvo*, 17th-century recipes from the royal chef, as well as transcriptions from individuals in the Zagorowski circle. Descriptions of the medicinal properties of food and the preparation of home remedies are found alongside advice on veterinary medicine, horticulture, gardening, and beekeeping.
The manuscript from the collection of the National Library of Ukraine was published thanks to the collaboration of Polish and Ukrainian researchers. The collection, compiled for the female heirs of the Rus-Ukrainian Zagorowski and Potcey families, is part of a shared Ukrainian-Polish heritage—a history not only of food but also of aesthetics, knowledge, religion, and identity.
