One of the hottest versions of the habanero is the Caribbean Red. Originating from the Yucatan Peninsula in Mexico, it is now commonly grown in the Caribbean and North America as well. This pepper variety is about twice as hot as a standard orange habanero.
The slightly wrinkled chiles are approximately 1 inch wide by 1.5 inches long and are similar in shape to the Habanero. The chiles ripen from lime green to a brilliant red.
TASTE: Typical citrusy/fruity/smoky flavor of the orange habaneros with twice the heat.
CULINARY USES: Excellent choice for use in salsa’s, marinades and of course, in hot sauce.

MANGO HABANERO SAUCE
3 habanero peppers, stemmed (and
seeded for less heat)
½ mango, peeled and pitted
3 tablespoons white vinegar
1 garlic clove
2½ tablespoons muscovado or dark
brown sugar
1½ teaspoons maple syrup
1 teaspoon salt
DIRECTIONS
1. Combine the habaneros with the mango, vinegar and garlic in a blender, and process until smooth.
2. Boil the sugar with 2 tablespoons water and add the habanero and mango purée. Simmer, uncovered, for 20 minutes.
3. Season with the maple syrup and salt.

They have a real fantastic tomato flavor not found in grocery store offerings. These tomatoes are indeterminate (they grow all season, they flower all season and they produce tomatoes all season. They don't stop until frost. Once heirloom tomatoes are picked, they do not have a long shelf life as hybrids but they more than make up for any shortcomings in flavor.
