You know peppermint is good at this time of year for making candy like peppermint bark, my wife does, or in the summer in a beverage or homemade ice cream. Thyme is an all around super staple in the kitchen used in sauces, soups, poultry and vegetables in many different ways. Parsley can be of course used as a garnish and eaten raw but has tremendous flavor when used in sauces or dried and used on poultry and pork. Parsley is also the most nutritious vegetable plant you can eat. Lemon grass is an exotic that has been getting popular in recent years. Delicious in stir fries, sauces, minced in salads, or used in some awesome desserts. Dill is just all around one of my favorites. I use it when canning, on eggs, baked potatoes, etc. and whatever! These are some great herbs to get started with or to add to your ever growing seed collection...maybe a gift for the gardener??
