For perfect froth for cappuccinos, liquid should reach a temperature of between 65 - 70°C (149 - 158°F). 

Just make sure the probe reaches at least an inch into the liquid and you can watch the dial go up on the reader so you're ready to remove the milk when it reaches the correct temperature. This is clearly indicated by a red section on the dial. An easy wipe clean and it's ready for next time.
